Sprouts & Green Mango Salad

Today is all about this herb dressed Mango & Moong Sprouts Bowl; Filled with crunchy veggies, super tangy raw mangoes, and fresh herbs.

Served with warmly spiced masala burgers, and massaged kale, this bowl is just incredible. Fresh, vibrant and delicious. So good and good for you!

These masala burgers from Trader Joe’s are potato based patties that feel like comfort, and taste like your favorite curry. You could absolutely substitute these with any  other vegan burgers you love. Serving the salad with burger patties makes this a more substantial lunch or dinner meal.

I also love adding more greens to the tangy sprouts salad, so I use kale. I massage kale with extra virgin olive oil and salt for a minute. Seriously, try it, it’ll blow your mind. It makes the kale so tender and more flavorful.

Ingredients:
serves 4-6

Salad:
2 cups brown and green moong dal sprouts, washed and drained thoroughly
1 green raw mango, diced into bite size pieces
2 indian green chillies, finely chopped (sub: serrano or jalapeno)
2 tbsp fresh cilantro, chopped
1 tbsp cup fresh mint, chopped
2 tbsp lime juice
1 tsp coarse salt

Herb Dressing:
1/2 cup fresh cilantro, chopped
1/4 cup fresh mint, chopped
2 tbsp lemon juice
3 tbsp extra virgin olive oil
1/4 tsp coarse salt

This is optional, but here’s how I like to eat this salad;
Putting together an individual bowl for 1:
1/2 cup kale tossed with 1 tsp extra virgin olive oil and pinch of salt
2 masala burgers from Trader joe’s (or any vegan/veggie burger of your choice)
2 tbsp homemade herb dressing (recipe below)
1/2 cup of the prepared sprouts salad

Method:
Herb Dressing:
Place the measured cilantro, mint, salt, and lemon juice in a blender. Blend until coarse, about 10 seconds. Now add the extra virgin olive oil and finish blending into a smooth dressing consistency. Set aside.

Sprouts Mango Salad:
In a large mixing bowl, add all the salad ingredients; both kinds of sprouts, cilantro, mint, mango pieces, salt, lime juice and green chillies. Toss together thoroughly, and set aside.

Putting together an individual bowl for 1:
Cook the Trader Joe’s masala burgers per package instructions. I prefer cooking them in the oven at 400F until they get toasted on the outside, and tender and soft on the inside. As a shortcut, you could also microwave them and it’ll taste just as great. Note that they won’t have a toasted crispy texture this way.

Massage kale with some olive oil and salt for about a minute.

Place the kale on a plate, serve yourself 1/2 cup of the moong sprouts salad, and the burgers. Drizzle generously with the herb dressing. This is now ready to devour!
