One Pot Rotini with Chickpeas (IP Recipe)

Inspired by the recent trend of one-pot recipes, I whipped together this simple one-pot pasta with chickpeas, warm spices and savory onions and tomatoes. Makes a perfect weeknight dinner, easy to make and delightfully delicious.

Ingredients:
1 box (1lb) rotini
5 cups of water
1 large red onion, sliced
2  medium tomatoes, chopped
4 cloves of garlic, thinly sliced
1 tbsp vegan butter + 2 tbsp olive oil
1/2 tsp cumin powder
1/2 tsp coriander powder
1/2 tsp red chilli powder (you can substitute with paprika to avoid the spiciness)
1 1/2 tsp kosher salt
1 can chickpeas, drained and washed
2 tbsp chopped cilantro

Servings: 6-8

Traditional stovetop method:
Heat butter and olive oil over medium heat in a sauté pan. Add the garlic, cumin, coriander and chili powders, and sauté for 30 seconds.

Add onions, tomatoes, and cook for 5 minutes until tomatoes soften and onions are cooked and softened.

Add the strained chickpeas, salt, and let the mixture cook for another 10 minutes.

Add pasta out of the box, and add 5 cups of water (for 1lb of pasta).

Bring the heat to high until the water comes to a boil. Drop the heat to medium low, and let cook uncovered until all the water is absorbed (around 10-12 minutes).

Garnish with cilantro (or your favorite herb) and enjoy!

Instant Pot/Electric Pressure Cooker method:
Press Sauté button and click the adjust button to Sauté More function basically means higher saute heat.

Add butter and olive oil. Once butter melts, add garlic, cumin, coriander and chili powders, and sauté for 30 seconds.

Add onions, tomatoes, and cook for 5 minutes until tomatoes soften and onions are cooked and softened.

Add the strained chickpeas, salt, and let the mixture cook for another 5 minutes.

Add the dry pasta, and add 5 cups of water (for 1lb of pasta). Water will just about cover the mixture. The water added will deglaze your pot if there are any bits stuck to the bottom.

Hit the keep warm/cancel button to turn of saute mode.

Click on manual, and set 5 minutes.Quick release the steam once cooking is complete.

If there is still liquid, you can turn sauté mode back on till the liquid is absorbed. Garnish with cilantro (or your favorite herb) and enjoy!
