We all have those days of slapping butter or jam on toast, while running out the door. What if we could spend a few extra minutes to make a healthy, hearty and importantly, tasty version of toast?
Getting creative with toppings is my favorite way to make a standard toast into a delicious meal. Breakfast, lunch, or snack, you choose! This is also easy to meal plan and pack ahead.
Ingredients:
serves 2
4 whole grain slices of vegan bread (bread often contains honey, sugars or enzymes. I recommend ‘Ezekiel’ sprouted grain bread)
1 medium english cucumber, diced
2-3 small red radishes, sliced thin into discs
a handful of cilantro, chopped (use parsley or basil if you prefer)
2 indian green chillies, finely chopped (use 1, or use a less spicy pepper per your tolerance)
2 cloves garlic, finely chopped (this is optional. omit if you’re not a fan of garlic)
1/4 tsp of kosher coarse salt
pinch of black pepper
2 tbsp lime juice
4 tbsp vegan mayonnaise (I use ‘Follow your heart’ brand)
Method:
In a mixing bowl, add 4 tbsp vegan mayo, 2 tbsp lime juice, chopped cilantro, minced garlic and green chillies. Add salt and pepper. Mix well. Then toss in chopped cucumbers. Set this aside for a few minutes for the flavors to meld.
Toast bread until perfectly golden and crispy.
Toss sliced radishes with a pinch of salt and pepper.
Pile on a generous portion of the cucumber garlic slaw on the toasts, top with more fresh cilantro, sliced radishes and devour! <3
