We had an exquisite experience traveling the past few weeks, and now that I’m back home, I’ve been craving everything homemade! There’s just something about your own kitchen and cooking yourself a bowl of comforting healthy yumminess!
This Vegan Indian bowl did the trick today. Lunch was garlicky stir fried broccolini with some cauli-rice and some hearty creamy masala dal (Dal Recipe here)
Ingredients:
Serves 2
2 bunches fresh broccolini, washed (I chop about 2 inches off the bottom stems and finely dice them. I leave the top part with the broccolini heads as is)
3 tbsp extra virgin olive oil
5 cloves garlic, thinly sliced
1 tbsp crushed red peppers (use per your discretion)
1 tsp coarse kosher salt
Method:
Heat a saute pan over medium heat with the measured olive oil and garlic. Bring this mixture to warm while the garlic infuses into the oil, about 1 minute. Add crushed red peppers and stir for 10 seconds.
Add the chopped bottom stem pieces of the broccolini and stir for a minute. Add the rest of the washed broccolini, and sprinkle salt. Toss this thoroughly together. Cover and let cook for 8 minutes over medium heat.
Open the lid, stir it around some more, and let continue cooking open for another 5 minutes and that’s it! Serve hot and enjoy however you’d like.
I often eat this just as is, and sometimes I pair it with dal or chili. The best Vegan meal is always simple!
