Happy Valentines Day everyone! Today is all about love not just for your significant other, but also for yourself, and every person and animal in your life! At least that’s how I see it 🙂 How ever you feel about this day, we have to agree this bowl of yumminess is an absolute showstopper!

Savory Oats are my favorite, and I probably will never get tired of making it. It satisfies that comfort food itch oh so perfectly and healthily. Today, I made a valentine inspired breakfast that is simple, healthy, soul satisfying, delicious and stunningly beautiful.

Ingredients
Serves 2
1 medium sized beetroot, peeled and cubed
3 cloves garlic, sliced thin
2 tbsp cilantro, chopped
1 green chilli, finely chopped
1 tsp coarse kosher salt
1 1/4 cups rolled oats
3 cups water
1 tbsp vegan butter (or oil)

Method:

In a stock pot, melt 1 tbsp butter and add in sliced garlic, chillies, chopped beets and cilantro. Toss together and add in measured salt. Let this cook for 5 minutes.

Add the rolled oats, measured water, and mix well. Let this cook over medium heat for 10-12 minutes. Keep stirring to make sure the oats don’t stick to the bottom. Cook until the oats are soft and porridge like.

Sprinkle more cilantro as garnish, and serve immediately.
