On the menu today: homegrown pea shoots stir fried with snap peas, along with crispy tofu and adzuki beans. Adzuki beans are incredible! They’re also known as aduki or azuki beans. Have you tried them? I highly recommend. Packed into these tiny beans are loads of fiber, protein, complex carbs and a plethora of much needed micronutrients. I think these may be also one of the most antioxidant rich foods available with 29 types loaded into it. The best part? They’re absolutely delicious.

We’ve been getting into home gardening recently, and sprouts and shoots are our favorite things to grow. These are pea shoots we grew from dried white peas that we typically cook with! How gorgeous are these.

They make the best greens for stir frying! And for some additional volume and flavor, I also added in some whole snap peas to the stir fry.

Ingredients:

Peas:
1 cup snap peas
2 cups pea shoots
1/2 red onion, chopped
2 cloves garlic, chopped
2 sprigs green onions, chopped
1 serrano pepper, chopped
1/2 tsp coarse salt
Crispy Tofu:
1 block tofu, drained & pressed to remove excess water out
1/2 tsp coarse salt
2 tsp oil
Beans:
1 8 oz can adzuki beans, drained & rinsed
1/2 tsp cumin powder
1/2 tsp paprika or chilli powder
1/2 tsp coarse salt
2 tsp oil

Method:
Tofu:
Cut the drained & pressed tofu into slabs. Heat a flat non stick pan over high heat; spread 2 tsp of oil all over. Sprinkle half of the measured salt over the tofu pieces, and place the salted side down on the pan. Sprinkle the remaining salt on the other side. Let this cook undisturbed until it’s golden brown on the edges. Check at the 3 minute mark, it may need a couple of more minutes. Flip and crisp the other side as well; this takes another 4-5 minutes. Then set aside on a paper towel.

Pea shoots:

Heat oil in a pan. Add garlic, serranos and green onions. Fry for a minute. Next add onions and cook until they soften, about 5 minutes. Next add the snap peas, and salt. Toss everything together and then add the pea shoots. Cook for for 6-8 more minutes. All the veggies should be cooked and tender, still retain a firm crunch. Set aside. Beans: Heat oil in a pan. Add cumin, red chilli powder and salt. Fry for a few seconds. Next add the beans and toss together for 5 minutes on high heat until fully heated through. Easy enough right? Make yourself a bowl with a good portion of Tofu & Veggies & Beans and devour!
