Spinach and Carrot Oatmeal

Continuing my oatmeal for breakfast series, here is my favorite savory way of eating oatmeal.

3/4 cup oats
1 1/2 cups water
1/8 tsp salt
1/3 cup carrots, thinly sliced
1/2 cup baby spinach
1 tbsp cilantro, finely chopped (optional)

Bring the water and salt to a boil over high heat. Add the carrots and cook for 3- 4 minutes until the carrots are tender. Add the spinach and  let wilt for a minute. Drop the heat to medium and add the oats, cook for 7-8 min stirring often. (If you are using instant oats, this will take only 1-2 minutes). Add cilantro, mix well and serve hot.
