Here is a side dish that’s light, flavorful and easy to make.
You need :
2 large zucchini, sliced into 2 inch pieces lengthwise
1 large onion, thinly sliced
8 sun dried tomatoes, sliced into think strips
1 tbsp red chilli flakes
2 garlic cloves, minced
1/2 tsp salt
3 tbsp extra virgin olive oil
Soak the sun dried tomato strips in lukewarm water.
Heat the olive oil in a sauté pan over medium-high heat. Add in the sliced onions and keep stirring it frequently. We are looking to caramelize it without burning it. Keep stirring until the onions completely wilt and turn golden brown and sweet.
Now add in the garlic, the sun dried tomatoes and its soaking water, red chilli flakes, salt and sliced zucchini. Mix it all together and cook over medium heat for 10 minutes until the zucchini is tender.
Serve warm.
I just tried this and absolutely loved it! I threw in some toasted pine nuts as well because I had them in the fridge and added dried basil and oregano. Instead of serving it as a side, I mixed the whole thing with some whole wheat pasta. Thanks for the idea and the great recipe! I love the fact that you include step-by-step photos.
