2 minute Cucumber Raita

This is my ‘weekday’ version of cucumber raita. Its a 2 minute version which works perfectly well with my weekday dinner schedule.

1 cucumber peeled, seeded and diced
1 tsp chopped cilantro
1 pinch red chilli powder(optional)
1 pinch salt
1 pinch coriander powder
1 cup indian or greek yogurt

( If you are using regular store bought yogurt then make sure you drain it over a cheese cloth to drain all excess liquid)

In a large bowl add in the cucumber, cilantro, chilli powder, salt and coriander powder.

In a seperate bowl beat the cup of yogurt with a spoon or fork to make creamy and remove any lumps. Add this creamy yogurt to the cucumber mixture and raita is done!


This simple quick dish goes great with a lot of dishes from curry, indian rice dishes, indian breads and many appetizers. Its a versatile resource to have.
