Lemon Artichoke Pesto

Here is an interesting recipe I tried which is a twist on the traditional artichoke pesto. The lemon zest and lemon-artichoke combo is just out of this world! It works great with any pasta or vegetable dish. It also works great as an appetizer smeared on any kind of toasted bread, topped with canned artichokes and capers.


1 cup canned artichoke Hearts
2 cloves garlic
1/2 cup fresh parsley
1 tbsp fine french cognac
1 tsp Lemon zest
2 tbsp Lemon juice
2 tbsp freshly grated parmesan cheese
1 tbsp extra-virgin olive oil

Place all the ingredients in food processor and process until pureed. Served with a lemon wedge.

There are so many varities of pesto you can make. Some I love and make at home all the time are Cilantro pesto, Basil Pesto, Arugula Pesto and Red bell pepper pesto.
